Broccoli Couscous Salad

Ingredients

  • 1 bag broccoli florets

  • 1 can chickpeas

  • garlic powder, salt, pepper, and italian seasoning

  • 1 tbsp olive oil

  • 1/2 cup crumbled feta

  • 1 box trader joes couscous

  • 2 tbsp lemon juice

  • Dressing

    • 3 tbsp tahini

    • 2 juiced lemons

    • 1 tbsp dijon mustard

    • 1 tbsp water

    • 3 tbsp olive oil

    • salt and pepper


Directions

  1. Coat your broccoli and chickpeas in olive oil and seasoning. Air fry on 400 for 15-20min or until chickpeas are crispy.

  2. Cook your couscous according to instructions and add 2 tbsp lemon juice into the water.

  3. Combine all dressing ingredients and pour over your coucous, broccoli, and chickpeas. Top with feta.
