Brown Sugar Glazed Carrots

Prep: 10minutes Cook: 25minutes Total: 35minutes


Ingredients

  • 2 lb carrots

  • 1/4 cup brown sugar

  • 2 garlic cloves

  • 2 tbsp butter (30g)

  • 1 tbsp olive oil

  • pinch of salt to taste

  • pinch of black pepper to taste

  • pinch of Parsley to taste


Instructions

  1. Preheat oven to 400F degrees.

  2. Cut carrot length wise.

  3. Toss in a bowl with sugar, butter, garlic, oil, salt and pepper.

  4. Pour onto tray, spread out.

  5. Roast 15 minutes.

  6. Turn carrots with a spatula, then roast a further 10 minutes until soft and caramelized with plenty of glaze left on the tray.

  7. Toss carrots in the glaze, sprinkle with parsley if using. Serve as a side and enjoy!
