Cauliflower Mac & Cheese

Ingredients

  • 1 large cauliflower, cut into florets

  • 8 oz hand shredded sharp cheddar cheeses

  • 4 oz hand shredded mozzarella cheese

  • ½ cup sour cream

  • 1 egg, whisked

  • ¼ cup finely sliced green onion

  • ¼ teaspoon garlic powder

  • ¼ teaspoon black pepper


Instructions

  1. Preheat oven to 400 degrees F

  2. Place the cauliflower in a large pot, add salt, and cover it with water. Bring the water to a boil and cook the cauliflower until it becomes tender (about 8-10 mins)

  3. Once the cauliflower is tender, drain it in a colander and allow it to sit for 5-10 minutes to remove excess moisture. Then, transfer the drained cauliflower to a spacious mixing bowl.

  4. Add 8 ounces of sharp cheddar cheese, mozzarella cheese, sour cream, whisked egg, green onions, garlic powder, and black pepper. Stir the ingredients together until the cauliflower mixture is thoroughly combined.

  5. Take the cauliflower mixture and transfer it to a baking dish. Sprinkle the remaining cheese on top.

  6. Bake the mac and cheese in an oven preheated to 400 degrees for 20-25 minutes or until it turns golden brown and starts to bubble.
