INGREDIENTS
1 lb ground turkey
2 cups rice, cooked
1 onion, diced
1 green pepper, diced
1 cucumber diced
1/2 cup shredded carrots
1 teaspoon minced garlic
14 ounces shredded cabbage or 1 package of coleslaw mix
1/4 cup soy sauce or liquid aminos
1 teaspoon ground ginger
2 teaspoons sriracha
2 tablespoons mayo
1 tablespoon sesame oil
salt to taste
pepper to taste
INSTRUCTIONS
In a large skillet, brown the ground turkey.
Once the ground turkey is cooked through, add the garlic and onion and sauté for 30 seconds.
Add the cabbage/coleslaw, green pepper, soy sauce, ginger to skillet and sauté until desired tenderness.
Turn off heat and add sesame oil. Salt and pepper to taste.
Build your bowl starting with cooked rice as the base, add cooked ground turkey and vegetable mixture, and top with carrots and cucumber.
Stir together sriracha and mayo and drizzle on top of bowl. Add additional soy sauce if desired. Enjoy!
