Ham & Cheese Egg Bites

Prep Time: 5 minutes Cook Time: 20 minutes Total Time: 25 minutes

Servings: 12 servings

Ingredients:

  • 12 large eggs

  • 1 cup cottage cheese

  • 1/2 cup shredded sharp cheddar

  • 1 1/2 cup diced deli ham

  • Salt and pepper

  • Italian seasoning

  • 1 Tablespoon Dijon mustard (optional)


Instructions:

  1. Preheat oven to 350F and prep muffin tin by spraying with non-stick spray.

  2. In a large bowl, combine the eggs, Dijon mustard, cottage cheese, ham, italian seasoning, salt and pepper to taste.

  3. Scoop 1/4 cup of the ham and egg mixture into each muffin tin cup.

  4. Sprinkle each egg cup with shredded cheese.

  5. Bake in muffin tin for 20-25 minutes.

  6. Serve and enjoy. Refrigerate leftovers in an airtight container for up to 4 days. Reheat and serve as desired.
