Mediterranean Green Goddess salad

Ingredients

  • 140g cabbage

  • 30g bell pepper

  • 30g cucumber

  • 3oz ground turkey

  • 28g feta

  • 40g spinach

  • 30g red onion

  • 2 1/2 tsp parmesan

  • 1 tsp olive oil

  • 2 tsp lemon juice

  • salt, pepper, and garlic powder


Directions

  1. Start by greasing a pan with zero calorie spray and adding your ground turkey. Season with salt, pepper, and garlic powder then cook until brown.

  2. Finely chop your cabbage, cucumber, and pepper before adding to a large bowl.

  3. For the sauce add your spinach, garlic, lemon juice, water, and olive oil to a food processor or blender. Blend until smooth and then add your onion, seasoning, and parmesan. The dressing should basically look like green juice. Pour half of it over your veggies and mix the salad. Then add the remaining dressing and mix again, you want the entire salad to be well coated.

  4. To assemble the salad simply top with your ground turkey and feta cheese. My favorite crackers to add to this salad are pita chips.
