Pepper chicken

Ingredients For the chicken

  • 4 chicken thighs, diced to 1 inch pieces

  • 1 tsp ground ginger

  • 2 tsp cornstarch

  • 1 tbsp water

  • 1 tsp sesame oil

For the sauce

  • 1 tsp ground black pepper

  • 2 tsp cornstarch

  • 3 tbsp oyster sauce

  • 1 tsp light soy sauce

  • 1 tsp dark soy sauce

  • 3 tbsp water

You also need

  • 2 tbsp cooking oil

  • 1 red bell pepper, diced

  • 1 green bell pepper, diced

  • 1 small onion, diced

  • 1 stalk celery, diced

  • 1 tbsp scallions, finely chopped


Instructions

  1. Combine the chicken, ginger, cornstarch & water in a bowl. Rub and mix until no liquid can be seen. Add sesame oil. Mix then set aside.

  2. Mix all the ingredients for the sauce.

  3. Heat up the oil in a pan over high heat. Add the chicken and stir fry until the chicken cubes become pale on the surface.

  4. Add onion, bell pepper and celery. Cook for 2 minutes or so until the chicken is fully cooked.

  5. Pour in the sauce (combine well beforehand). Fry until it becomes thick and coats the chicken and vegetables evenly.

  6. Sprinkle scallions over. Dish out and serve immediately with plain rice.
