Poppy Seed Chicken

Servings: 8 servings



INGREDIENTS

  • 4 chicken breasts ( or 5 cups chicken breasts, cooked and cubed or shredded)

  • 1 onion, diced

  • 2 celery stacks, diced

  • 1 cup sour cream

  • 2 (10.75 ounce cans) condensed cream of chicken soup

  • 2 cups crushed Ritz crackers, (about 1 1/2 rolls of Ritz crackers)

  • 1/2 cup butter, melted

  • 1 Tablespoon poppy seeds, (optional)

  • optional 2 cups cooked broccoli

  • optional 2 cup rice



INSTRUCTIONS

  1. Preheat oven to 350 degrees.

  2. Place chicken breast in a 9X13 casserole dish with diced onion and celery. Cook for 30 minutes or until chicken is done. *Note: Some people layer some cooked rice on the very bottom underneath the chicken and add broccoli for a one pan meal.

  3. Once chicken is cooked, dice chicken into bite size pieced.

  4. Stir together the sour cream and condensed chicken soup. Pour over the chicken and mix together.

  5. In a small separate bowl, stir together the melted butter and crushed crackers. Spread over the chicken and sauce. Sprinkle the poppy seeds on top.

  6. Bake for 15 minutes in the oven, until the top of the casserole is browned and the sauce is bubbly.

  7. Serve plain, over rice, and broccoli on the side. Enjoy!
