Shredded Chicken Sweet Potato Nachos

Ingredients

  • 1/2 medium sweet potato

  • 3oz chicken breast

  • 30g shredded mexican cheese

  • salt, pepper, everything but the elote seasoning

  • 50g avocado

  • 2 tbsp salsa

  • 2 tsp olive oil

  • 40g black beans

  • 40g corn


Directions

  1. Start by slicing your sweet potato into thin, coin size pieces. Coat in olive oil, salt, and pepper before placing in the air fryer on 400 for 10-20 min.

  2. Season your chicken breast with salt, pepper, and everything but the elote seasoning. Bake on 400 for 15-25min or until there is no pink left. Shred with 2 forks.

  3. When the sweet potato is done add your cheese and chicken on top, place back in the airfryer until the cheese has melted.

  4. Top with your beans, corn, avocado, and salsa.
